Azalea’s gluten free vegan blueberry pie

I like to make a healthy treat for my family as weekend approaches this week I made a coconut blueberry pie that will not max out your calorie count or spike your sugar levels!!! I love this not only because I love coconut but also because of the health benefits of blueberries sooo without further ado heres the recipe 😍
I put 750g frozen blueberries with 5 tablespoons of coconut sugar and 1 teaspoon sweet cinnamon.
Then I mix 2dl organic oats with 1dl coconut flour and 0.5dl organic coconut sugar and 1 tablespoon cinnamon.
I mix 1 dl of coconut oil and 1 teaspoon salt then I add 1 tablespoon of freedom fruit syrup and mix and put on top of the blueberries. Then I pop it in the oven at 180 dregree Celsius for 25min.. I like it quite brown as it gives it a caramel taste but otherwise 20min should do 😁
I had to have some with my baby girl after lunch haha we couldn’t wait for the lads to get home lol sorry 🤷🏻♀️💁🏻♀️
